Karen, 30 grams of carb a day is very restrictive and therefore hard to maintain in the long run. Even Dr. Atkins has you work up to sixty or so a day. Much, much easier on sixty, room for very interesting meals. Yet that is still low enough to get the benefits of a low carb diet. Additionally, there are many new low carb food items to make life easier. If you have a Trader Joe's near you, they carry La Tortilla Factory low carb tortillas, 12 grams of carb, 9 of them fiber, leaving three usable carbs per tortilla. They work best with strong tasting foods like enchilada and taco fillings. Some supermarkets are now carrying them too. I also use Food4Life low carb bread; this has four usable grams of carb per slice. Grilled cheese sandwiches, french toast, endless possibilities. I imagine you can make bread crumbs and croutons with it too. The website will give you locations, generally health food stores. Also Trader Joe's. If you have a meal heavy in protein and fiber, you can also work in a small serving of a starch. Your meter will tell you what is possible for you. Rice is hard for me, potato works. A pasta with a lot of meat, some veggies like zucchini and a salad works well too. No more than an ounce of dry pasta per serving. Use your imagination and you will not realize you aren't in carb heaven! Helen
